Zucchini Flower Fritters

  • Approximately 10 zucchini flowers
  • 1 egg
  • 2 cups self raising flour
  • 3/4 cup light milk
  • 3/4 cup beer
  • Salt, to taste
  • Oil (olive or sunflower), for frying

1. Finely chop the zucchini flowers (including all of the flower- not just the petals)


2. In a bowl, whisk the flowers, egg, flour, milk, beer and salt


3. Heat enough oil to cover the surface of a large frypan to 1-2cm high. Drop tablespoons of batter into the oil and cook in batches until golden on one side. Flip over and cook until golden on the other side


4.Drain on paper towel and eat immediately, or cold

A fun fact about beer, considering it is an ingredient in this recipe. For some people with Irritable Bowel Syndrome, avoiding large amounts of wheat can help alleviate symptoms. Whilst beer is fine for these people to consume from a wheat point of view, alcohol can irritate the gut so for these individuals, only a small amount of alcohol, with food, is advised.
