Yoghurt, Apple and Oat Slice

  • 2 large (approximately 240g each) Granny Smith Apples
  • 1.5 cups Greek yoghurt
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 1 cup rolled oats
  • 1 cup self raising flour (ideally wholemeal)
  • 1/4 cup brown sugar
  • 3 tbs honey
  • 1 tbs cinnamon
 
 

1. Preheat oven to 180C. Wash and finely chop the apples into 1cm cubes, leaving the skin on

 
 

2. In a bowl, combine the yoghurt, eggs and vanilla essence

 
 

3. Add the oats, flour, sugar, honey and cinnamon; stir to combine

 
 

4. Pour the mixture into a Xcm square tin lined with baking paper

 
 

5. Pour the apples over the mixture evenly and press firmly with your hand so the majority are pressed into the mixture

 
 

6. Bake for 40 minutes or until golden brown. Serve warm or cooled
