Whole Lemon, Apple and Oat Cake

  • 2 medium sized lemons, peeled
  • 1/2 cup caster sugar
  • 1/2 cup canola oil
  • 1 egg
  • 1 1/2 cup rolled oats
  • 1 cup self raising flour
  • 1 egg
  • 1 medium apple
  •  3 tbs honey

  1. Preheat an oven to 180C. Ensure all pith and seeds are removed from the lemon and chop into chunks
 
 

2. In a food processor combine the lemon, sugar, oil and egg

 
 

3. In a bowl combine the flour and oats with the lemon mixture

 
 

4. Mix through the honey and pour the mixture into a lined 8 inch cake pan

 
 

5. Quarter, core and finely chop the apple (leaving the skin on)

 
 

6. Sprinkle the chopped apple over the mixture then press the apple into the mixture

 
 

7. Bake for approximately 45 minutes until a skewer comes out clean, serve warm or cooled
