Sooji Halwa- Semolina pudding (without ghee)

  • 3/4 cup sugar
  • 1 1/4cup water
  • 1/4 cup milk
  • 3 tablespoons sultanas
  • 1 teaspoon cardamon
  • 3/4 cup semolina

1. In a saucepan, put the sugar, water, milk, sultanas and cardamon. 

2. Stir over low heat heat until it comes to the boil, turn off heat and leave aside


3. In a frypan, add the semolina. Cook it over a high heat stirring continuously until the semolina all turns golden brown


4. Add the sugar mixture to the frypan and stir continuously until it forms a dough-like consistency


5. Pour into a medium size (1L) rectangular dish and set overnight, or alternatively eat warm as a porridge
