Snake Bean and Coconut Salad- Jukut Urab

Note: this dish is best served as part of the Balinese Feast, which also includes Balinese basic spice base- Base Gede, Sate Sauce- from scratch, Balinese Coconut Chicken Curry- Kare Ayam, and Balinese Chicken and Coconut Meatballs- Sate Lilit Ayam

  • 200g spinach, shredded
  • 200g bean sprouts
  • 200g snake beans, tips removed 
  • 1/2 cup shredded coconut
  • 1 cup curry sauce
  • kaffir lime leaves, shredded
 
 

1. Slice the snake bean into 1cm pieces

2. Roast the coconut under the grill until golden

3. Boil water in a saucepan and have a bowl of ice and cold water next to it. Put the spinach, beans and beanshoots in the boiling water for about 5 seconds, then remove them with a sieve and put them straight into the ice water for a few minute. Drain

 
 

4. In a bowl, combine the vegetables, coconut, curry sauce and kaffir lime. Serve immediately with curry and rice

With iron deficiency being a common problem all over the world, it is not surprising comments such as “eat your spinach” are popular advice to combat this. Unfortunately, compounds in plant foods such as spinach, called oxalates impair the absorption of iron from non plant foods. Alternatively, adding red meat to a vegetable based dish such as spinach dish, will improve the iron absorption.
