Real Cocoa Banana Bread

  • 250mL warm water
  • 1 tbs canola oil
  • 1/4 cup sugar
  • 1/4 cup cocoa powder 
  • 1.5tsp dried yeast
  • 1 pinch salt
  • 3 cups plain wholemeal flour
  • 3 bananas, mashed
 
 

1. In a bowl, combine water, oil, sugar, cocoa powder, yeast, salt and flour, until it begins to come together, then use your hands to continue to combine the ingredients until they form a ball of dough

 
 

2. Cover with a tea towel and leave in a warm place for 1 hour

 
 

3. Add the mashed banana and mix through until combined (this with turn the dough very moist). Cover with a tea towel and return to the warm place for another hour

 
 

4. Preheat oven to 180C and line a baking tray with baking paper. Turn the dough out onto the tray (if it is too wet at this point to hold it's shape, mix in extra flour. Form a loaf shape and cook for 3-40 minutes, until cooked through. Serve warm or cold.
