• 1 cup olive oil
  • 1 large orange, or 2 small oranges
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 3/4 cup caster sugar
  • 3 cups self-raising flour
  • 1 teaspoon baking powder
  • 1 cup raisins or sultanas
  • 1 cup walnuts, finely chopped (optional)

1. Juice the orange/ oranges until you have 1 cup of juice/ pulp. Put this in a bowl with the oil, sugar, cinnamon and cloves and mix until combined


2. Sift in the flour and baking powder, folding it through the wet ingredients as you go


3. Add the raisins and walnuts and fold through


4. Pour into a bundt tin or 20-25cm round cake tin, lined with baking paper


5. Cook in an oven preheated to 180C for 35 minutes or until cooked through
