Coconut Cocoa-Nut Scrolls

  • 1.5 cup wholemeal self raising flour
  • 170g Greek style coconut yoghurt (I used 1 tub Chobani coconut yoghurt)
  • 1 tbs olive oil
  • 3 tbs cocoa nut spread (I used Mayers Cacao Super Spread)
  • 1/4 cup desiccated coconut
  • 1/4 cup almond meal
  1. Preheat oven to 180C. In a large mixing bowl, combine the flour and yoghurt with a spoon until just combined. Using your hands, knead the mixture into a ball. The mixture should be moist but not sticky

2. On a floured surface, roll out the dough into a rectangle approximately 40cmx20cm, 1/2cm thick


3. In a bowl (feel free to use the dirty bowl used to make the dough), combine the nut butter, oil, almond meal and coconut


4. Spread the nut butter mixture evenly across the dough


5. Starting with the long side closest to you, roll the dough up tightly. Cut lengthways into 2cm thick circles and place them flat side down on a baking tray (lined with baking paper)


6. Bake for approximately 15 minutes, until the dough begins to turn golden. Enjoy warm or cooled.
