Chocolate Beer Bavarois (or, Chocolate Bavarois)

(Recipe from Stefano Di Pieri)

  • 300mL chocolate beer (I used Mildura Brewery Choc Hops Stout) OR 300mL skim milk and 1tbs cocoa powder
  • 70 grams caster sugar
  • 2 egg yolks
  • 3 sheets gelatine (5 grams in total), soaked in cold water for 5-10 minutes
  • 250mL thickened cream

1. In a saucepan, bring beer (or milk and cocoa powder) to the boil


2. In a bowl, whisk egg yolks, then slowly whisk in half the boiled liquid


3. Return the egg/liquid mixture to the other half of boiled mixture in the saucepan, and cook it on a low heat, whisking, until the mixture thickens


4. Remove from heat and whisk in the gelatine. Cool the mixture down quickly by putting the saucepan into icy water


5. Beat the cream to form stiff peaks


6. Fold a spoonful of the mixture into the cream until combined, the repeat with spoonfuls until it has all been folded through


7. Spray plastic cups or ceramic ramekins with cooking oil, the spoon mixture into them. Refrigerate for 4 hours or until set, then turn out onto a plate and serve

And a word from the dietitian...

They don’t call it beer belly for a reason... gram for gram alcohol contains a similar amount of kilojoules (29) to fat (37). Cooking the beer will burn off the alcohol, making the overall kilojoule content less than the real stuff.. making this recipe not only child friendly, but healthier!
