Balinese Coconut Chicken Curry- Kare Ayam

Note: this dish is best served as part of the Balinese Feast, which also includes Balinese basic spice base- Base Gede, Sate Sauce- from scratch, Balinese Chicken and Coconut Meatballs- Sate Lilit Ayam, and Snake Bean and Coconut Salad- Jukut Urab

  • 2 tbs coconut oil
  • 1 cup Balinese basic spice sauce
  • 1 lemongrass stalk, bruised
  • 4 kaffir lime leaves, shredded into chunks
  • 600g chicken breast, cut into chunks of approximately 1 inch
  • 400mL light coconut milk
 
 

1. Heat oil in a saucepan and add the spice sauce and saute for a few minutes. Add the chicken pieces and saute until the chicken turns white

 
 

2. Add the lemongrass, kaffir lime leaves and coconut milk

 
 

3. Simmer for 20-30 minutes on a low heat, stirring occasionally, until the sauce thickens. Serve with rice

NB- you can also use this sauce to make Snake Bean and Coconut Salad- Jukut Urab

Kaffir lime looks to have benefits outside of consuming it. In a study, people massaged with kaffir lime oil rated themselves as more alert, attentive, cheerful and vigorous than participants who were massaged without kaffir lime oil. These findings are likely to represent stimulating/activating effects of the kaffir lime oil and provide some evidence for the use of kaffir lime oil in aromatherapy, such as causing relief from depression and stress.
